This is the ABSOLUTELY MOST TERRIFIC BANANA CAKE recipe that is guaranteed to win a place on your favorites list. My family loves it for the taste and I love it because it is the simplest dessert to make. Just put all the ingredients in a big bowl and mish.
Ingredients:
1 ½ cups sugar
¾ cup (12 Tablespoons) margarine
3 eggs
1 ½ teaspoons baking soda
¾ cups apple juice or orange juice
1 ½ cups banana pulp (3 medium size bananas)
2 ¼ cups flour
¼ teaspoon salt
1 teaspoon vanilla (optional)
Mix everything until smooth. Pour into a greased 9×13 rectangle pan or a bundt pan. Bake at 375 degrees about 1 hour or until dark brown.
Note: If you are short banana pulp, you can add apple juice to measuring cup of bananas to reach 1 ½ cups. Have at least 1 cup banana pulp.
Can be frozen
