Super Easy and Quick Flourless Chocolate Cake

chocolate cakeThis is a favorite, not just for Pesach, but all year because it is so delicious. Small slices, please, it is very rich.

Ingredients:
1 12 ounce package of bittersweet chocolate chips
1 stick margarine (4-ounces)
1/4 cup sugar
1/4 cup strong coffee, brewed and cooled
3 eggs

Preheat oven to 425 degrees. Use a greased 8-inch springform pan. Put the chocolate, margarine, sugar and coffee in a glass bowl and microwave on high for 1 to 2 minutes or until the chocolate and margarine are melted and smooth when whisked. Whisk in the eggs until smooth and well-blended. Pour the mixture into the greased pan. Bake for 10 to 15 minutes. The cake will not completely set in the middle. The sides should pull away slightly from the pan. Cool to room temperature and refrigerate until cold. Whipped cream or pareve whipped topping is great on the top of each piece. This serves 10 to 12 normal people or 4 chocoholics.
